Esselunga opened in 2022, taking a space that had been vacant since the station's 2010s remodel. That was during the era that Trenitalia tried cramming retail spaces into every little bit of available space in their main stations, replacing concourses, waiting areas, and ticket offices with shops, something I have decidedly mixed feelings about. This is in the original 1800s-era building, which hasn't been used for trains since a larger new platform area was built in the 50s, so I'm not sure what (if anything) this area was used for before the 2010s.
