The inclined moving walkway drops you in the deli section, with the first department (going clockwise around the area) being Il Caseificio, which seems to translate roughly to "the dairy" or "creamery", but with an emphasis on cheese. Here, it seems the emphasis is on buffalo mozzarella, which is my absolute favorite cheese of all kinds -- it's basically fresh mozzarella (which is already really good), but made with water buffalo milk instead of cow milk. It's especially good on pizza, but I think I only had pizza with bufala once on this trip. (I only had pizza for dinner twice on this trip, plus pizza by the slice another couple times for lunch -- pretty unusual for me!)
